If you have extremely solid standardized test scores, a rigorous schedule with several APs and a high average, do you really need a smorgsabord of ECs?
I, personally, don't have that many.
Model UN - several awards at different universities
2 Year internship at a Law office
Somewhat active member of Red Cross and Key Club
Writer for School Math and Science Publications
Editor for School Newspaper
Member of school Science Olympiad Team
Some college courses in Math/Science
Doing scientific research over the summer
Thats about it. Not great, but serviceable.
So... what do you think?

What are you talking about, Stanfordhopeful?? Your ec's look pretty darn good to me! Pending that you've done each club for a few years, tied together with the rest of your academics, i say you look pretty good. you dont need to do a lot of ECs to make a good impression on a college... quite the contrary! they want focus on a few things. Good luck and keep your head high!
