Does legacy for distant family members even matter? I have a distant aunt who went to Stanford.

Legacy status applies only to the parents of the applicant.
There is a space on the application to list relatives--with their relationship to you--who attended Stanford. You can list other relatives--it doesn't hurt, but if they are not parents, it is unlikely to make a difference.
What, by the way, is a "distant" aunt? I thought there was only one type of aunt.

Maybe "distant aunt" means a female that is a generation above, such as a cousin-once-removed.

At Stanford, yes.
At some other schools, no. The book A is for Admission had a section or chapter on this and I believe that at many of the Ivy League schools, only students whose parents are alumni of the undergraduate college are considered "legacy" applicants.
