do you know if the UC admission process goes according to the major you picked? or does it vary among all the UCs

It goes by major.
Some schools have seriously impacted majors, and are very selective regarding the applicants.
UCLA Business and Communications are two seriously impacted majors, and it takes an act of God to get accepted into UCLA majoring on one of those two fields.

It goes by major. You can expect Computer Science/Engineering and Electrical engineering to be impacted in most of the top UCs. Some are impacted only at certain schools. Bioengineering, for example, is impacted at UCSD.
Because of comprehensive review, I think if you have shown that you're really strong in one subject area (physics, for example) and have shown a passion for that subject, you're more likely to get into that major if you applied to it.
But if you've applied to a non-impacted major, it's generally not taken into consideration. The websites usually list what majors are impacted.
