I was just wondering because I notice that some apps have applicants write only one essay, and some have three seperate topics. What schools place a lot of weight in the applicant's essay?

The ones I know of for which essays are all-important are out of the mainstream: Deep Springs and St. John's. In general, I would imagine that elite LAC adcoms would read the essays most attentively and therefore weight them more than larger universities would. Nonetheless, the essays are a special part of any application because they're your chance to speak for yourself.
