Im a self proclaimed atheist and i would like to somehow incorporate that into one of my college essays. however, my mother suggested that i shouldnt, for fear i might inadvertently offend admissions personnel, thus, lowering my chances of getting in. Any suggestions?

IMHO, unless you're going to a religious school (I am inferring that you're interested in Rice), it won't hurt you unless you go out of your way to be offensive. So as long as your essay shows them an important part of you and you respect others' beliefs, it will be okay.
This from a self-proclaimed hardcore Christian.
