I'm unsure what to put on my applications as far as ECs... I have a ton of stuff I've done through school, but then there's things like playing the piano for 12 years, and playing softball in my town for 6 years.... should I include that to show that I'm "well rounded" or should i leave it off because it makes me sound like I'm hopelessly searching for things to include? I'm looking at some top schools (ex. Columbia, UC Berkeley, Northwestern, etc.) so what do you think their opinion would be?

If you did something for at least a few months, put it in. If you volunteered at a canning drive for two hours, dont include it (unless it's part of some club, and then you might put in down where you explain everything.) If you put down extremely minor things then the colleges may be less inclined to be impressed by your major activities.
