Is there a conceivable reason why anyone would take math ic over math iic? I don't really understand, since the IC seems extremely easy. Like, is there a clear benefit of one compared to the other?

IC may be "easier" but IIC has a much better curve and is relatively easier for those have taken precal/trig.
