Do most colleges look at one's highest composite score? Would they take sittings into account? (e.g. in my case, I took the SAT twice and recieved the same score. However, my math and verbal flip-flopped, giving me a much higher composite score)

Majority take your highest subscores from multiple tests to get a composite; minority (such as all UC's) consider your highest composite from a single sitting if you submit multiple test scores.
