Hiya I remember reading about this on a post, but I just wanted to check...is the Art of Problem Solving the best book to use to prepare for AMC, AIME, ARML, etc.?
Also, would one need both Volumes I and II or just one of the two? Meaning...is Volume I too easy to even bother with...or is Volume II too hard to even bother with?

vol 1 is the right level for AMC 10/12 (also Mathcounts through Nat'ls, if you know any middle schoolers). Vol. 2 is the right level for the hardest AMC 12 problems, plus AIME and the simplest USAMO-type problems. Whichever one you buy, you will need the solution book.
