My school offers about 15 APs and you can take them starting junior year.
I already took 2 of them, Computer Science 5, and Spanish 4.
Now my senior year schedule is
AP Calc BC
AP English lit
Honors US Gov
Honors Intel Research
Art (school requirement)
Fitness Team Gym (school requirement)
Would this be considered an ok schedule for top colleges, not ivys.

Why don't you take AP government? Is that a semester course or a year-long course? You're only taking 4 "real" classes...do you have a free period? 4/15 APs isn't taking full advantage your school's offerings. Your schedule could be acceptable at many colleges though...where are you applying?

Carnegie Mellon, Cooper Union, Rensselear Polytechnic Institute, Washington University in st. louis, etc. I am interested in Computer Engineering. The only problem with my school is that they dont allow you to take more than a 1-7 schedule for senior year, and so far i have a 1-6, and since AP Physics is a double period they wont allow me to take it because i have no room.

Also AP Government is not avaliable to people who didnt take AP US History the previous year because it doesnt follow what you need to know for the regents. The people who took it already took it half a year before they had to.

Do honors classes count as challenging classes? Everyone here seems to be taking 10+ APs, but cant taking honors courses also show colleges that you are taking a demanding schedule?

Would this be considered a slacking off schedule?
