What exactly are the "typical" core colleges that everyone, irregardless of major, must take? I'm especially interested in the number of math and science courses that are required.

The number of math and science courses required for CORE depends on your major (and the school). Most arts majors won't require as many math and sciences for CORE as the science majors usually (although I think some schools have the same CORE requirements for all majors). Sorry I can't give specific numbers because I'm currently attending comm. college and I'm sure that our CORE requirements are different from most colleges (given that it is a two-year instead of a four-year degree) and I haven't looked at class requirements for the schools that I plan to transfer to (yet).
If you have a particular school (and major) in mind, then you could easily find the information on their website. Most colleges have a list of recommended classes for most (if not all) of their available majors.

In The College at Penn they call it the general requirement:
Sector I: Society
Sector II: History and Tradition
Sector III: Arts and Letters
Sector IV: Formal Reasoning and Analysis
Sector V: The Living World
Sector VI: The Physical World
Sector VII: Science Studies
2 courses each in I - III, 1 each in IV - VI, plus 1 more from IV - VII for a total of 10 courses.

There's also a language requirement of 4 courses that you can dodge by getting a high enough score on the AP or SAT II. (You still need a total of 32+ courses to graduate, but you'll be able to use those 4 for whatever you want.)
