Obviously, it depends on your preferences.
In single rooms, you'll get a lot of privacy -- and pay for it too, both financially and, unless you're very gregarious, socially. It's great to have your own space, but if you're not the kind of person to actively seek out new friends, you're probably going to be a little lonely.
Double rooms are my suggestion: you have one roommate, so that's one friend you're likely to meet right away. Even if you don't end up liking that person, perhaps s/he will bring some friends up to the dorm you can click with. Sure, you have to live with someone else, but that's part of the college experience.
Triples: these are okay, but be careful. There are two other people, so there is a chance that two will click and the third one will be "left out" -- and maybe that one'll be you. With three different people in a room, there are bound to be living space differences.
Multiples above that: Eiyiyi. Only if you're adventurous and good with people, eh?
As for single sex buildings, separate floors, and "every other door," that one's definitely best left to your preferences.
