I am semi-sure about my college major that I will report on my National Merit Scholarship application. However, what if I change my mind? Can I change it, or is the major and career I report not really that important?

Neither is particularly important and meant just to give schools your information so they can decide whether or not to send materials to prospective students, which you will get A LOT of anyway if you make semifinalist and finalist, no matter what major and/or career you list.
