I've received letters from the admission office asking me if I'm going to attend or not, should I just fill out their form or should I write a letter to them (which I've been told is a more proper way). And if i'm going to write to them, what should i say?

Jose, the better way, IMO, is to send a short letter along with the response form, unless the form has a space for comments. Little personal touches always elevate the level of correspondence, I think. Just thank them for offering you admission and (if you're willing) tell them where you are enrolling. Colleges always like to know who beat them out. Finally, if you're further motivated, you might give them your rationale for your decision to enroll elsewhere. That's also helpful. Congratulations on your multiple acceptances.
