"Describe your intellectual interests, their evolution, and what makes them exciting to you."

Does anybody have any ideas about what I could write about? I've been racking my brain, but I don't know how to answer this question!

By the way, I'm planning on majoring in engineering. Thanks

Only you can answer this question, really... you have to think about WHY you want to major in engineering, what about it is interesting that makes you want it to be your discipline over any other intellectual field.

Did you play with Legos for hours on end as a child and then move up to building things around your house? Or did you play video games or spend hours on computer interactive games and then move on to wonder how the programming works? Did this lead you to take things apart or put them together in new ways to see if they still worked, or worked differently? Did anything, an event, strike you as a kid that engendered your interest in engineering? Just some ideas that might help or stimulate your thinking. I have know idea what Cornell is looking for; my D is not applying there.
