I applied to MIT EA. Should I call them to confirm that all of my stuff has been received? or should i just assume that it has been because I havent heard anything otherwise..?

There is NEVER a downside to calling except for the cost of the call. The worst case (and this happened to me w/r/t my D's app) is that they will not bother to check. In the worst case, you are no worse off than now.
A better strategy for next time, I think, is to send the stuff off far enough in advance to take action before the deadline, and verify with a call before it is too late.
BTW, if you've not heard ANYTHING (no email, postcard etc) from the school, I would call posthaste.
