OK, I'm a rising senior, theater major.
GPA 4.34 in the hardest curriculum my school offers, 1400 SAT (800V), 2260 SAT2 (800 Writing). No sports, extracurrics almost all theater and writing, but have been published in local newspapers and founded a theater company, so not too shabby.
Anyway, schools:
Barnard
Boston College
Brown
Carnegie Mellon (auditioning for musical theater)
NYU (auditioning for Tisch musical theater)
Northwestern
Sarah Lawrence
Swarthmore
UCLA (auditioning for theater)
Look ok? Do I need more safeties? According to princetonreview.com, the only safety on here that's not an audition school is Sarah Lawrence.
Also, do I have too many schools?
Thanks

You do not have too many schools, no. Your list has two very different kinds of college programs, though, so I am not sure which you prefer. You have some of the really top musical theater programs that require auditions to be admitted (Tisch/NYU,CMU) but also have on colleges that have theater departments but no musical theater major or no audition for admittance. Some, though I am unsure, might just have it as EC? or like i never have thought of Swarthmore for theater but I am not up on their offering in that area. I am wondering for musical theater, if you are interested in applying/auditioning to programs such as NYU and CMU's, if you have looked into University of Michigan, Ithaca, Syracuse, or Emerson? That adds some variety, but all have musical theater majors...not the same as some on your list. So, first I would have to hear your preference as to whether you wanted a theater program of the sort that is conservatory style in a college setting and requires auditioning, such as NYU or CMU, or want to just major in theater in a department that is not by audition or not conservatory in style.
Your credentials sound good so far. Would love to hear about the theater company you started. Sounds cool. I have teen daughters into theater.

Well...I'm in a bit of a quandary...I want to study musical theater, and that means conservatory, but I don't want to lose the rest of my knowledge---I speak french pretty fluently and have german basics, and there are so many things I want to learn besides musical theater...so I'm applying to the best conservatory programs, ones that are part of good universities, and then a selection of good universities with good theater programs, and just seeing where I get accepted.
The theater company is a lot of fun...I was suprised at how easy it was to begin once I got over the "oh my god what am I doing" phase.

Congratulations. After looking at a bunch of similar postings, I think you have perhaps done the best overall job of research and picking. I have absolutely nothing to add.
