I'm a senior and take half my classes in college. I'll have at least six semesters of college math when I graduate, and one or two of those will be upper division classes. How much much will this help to get into schools? Will it make up for few ECs?

It should certainly demonstrate your ability to do college level work, particularly if you have done well in these classes. A recommendation from a prof might be a further way to exploit your college classes. At selective schools, strong academic performance can often offset weaker ECs, but it depends on what the college is looking for.
