When they ask you to turn in a sample of your writing (3 to 5 pages for cornell I think) how does one go about picking which one?

If I'm not mistaken, Cornell asks you to write an essay about your academic potential. I do not recall their requesting an actual written sample.
In such case when they do want a sample, then why not just choose your best writing? You must have an A+ essay somewhere that you wouldn't mind showing to colleges.

Just any one...that you think will really help. So submitting a failing paper probably wouldn't work. They say on the Cornell app. that it has to be graded or have some type of techer comments on it.
