On one of my applications it asks to describe some of the EC's that mean the most to me. Would it be weird if I sent in pictures of some of the work I've done along with a written statement about a particular EC?

I disagree just a little...
If you are responding to a question about which EC means the most to you, then what you SAY about the illustration and what you say about the EC is much more important than the quality of the picture.
This is quite different than if you were submitting art work because you wish to be a studio art major.
If you have a digital camera, take a picture and paste it in a Word document. Print it. In application, refer to it and say "(see attached)"
