Ok, so I understand the concept of rolling admissions (which I like very much). However, say I apply to a school via EA, ED, or regularly. If I sent in my application in say September, would I hear back any sooner than December 15/April 15 (most colleges notification dates)? Or, do they send all notices on that specified date?

The ED and EA schools all respond on their specified date---they are pretty timely. The RD notices can be a bit staggered. Rolling admissions schools will let you know as soon as they care to---usually fairly quickly if it's good news. If you apply very early to them---and you should---you will find out usually within a month of them getting your completed aplication materials, scores, transcript, etc.
