It it better to have a lot of ECs? Or is it better to have a few that you devote a lot of time to?
For example, I am only involved in about three clubs at my school, but I have a job that takes up a substantial amount of my time. I also devote a lot of time to figure skating and have been doing that for a number of years.
I'm aiming for NYU, USC, UCLA, UCB, etc. My biggest reach is maybe Cornell.

I think having 2-3 clubs/sports is better than about 10, assuming you have shown leadership or have won some awards.
Quality... not quantity.

Your EC should have 4 characteristics:
Maturity, leadership skills, determination, and CONTINUITY.
They want to know that you can participate in the community at large, can recognize and assist in ameliorating community problems, and can contribute to the welfare of OTHERS.
The EC where you help others (instead of YOURSELF) will carry more weight in the eyes of adcoms.
