Ok, I've been accepted to four places that interst me:

UCLA
UC Berkeley
Cornell
University of Chicago

First off, I keep UCLA up there because it's where I believe I can get the best experience of living, not just education, because college is about more than just education.

I'm honestly not sure what exactly it is I'm interested in because it changes quite often so I want a place where I can be fairly flexible; but my current interests are in Psychology and Law. Any suggestions?

One last thing, I realized (long after admissions were due) that I'm incredibly interested in Columbia, what are my odds of being able to transfer in?

as you say, you have the best experience of living. you're in california. you've got the mountains. you've got the beach. i don't know why you'd ever want to go anywhere else.

You seem to be leaning towards UCLA... go for it. You'll probably do best where you're happiest (considering you might want to apply to law/grad school). Also, UCLA has an excellent psychology program.

let us know when you decide. (Bias alert: I've decided to attend UCLA over Berkeley.)

Heh, decided on UC Berkeley. I looked into it and UCB has an excellent psychology program and my parents would be far more supportive of me going to UCB. Since I'm fairly even in considering the two schools, I think I'd rather pick the one where my parents don't disown me

Why don't you go to Chicago or Cornell and get away from your parents?
