Any stats on undergrads from cornell and chicago? What percent from cornell/chicago apply? What percentage get in? how many people drop their premed concentration after the first year of college?

I know Cornell is a great, difficult pre-med environment. Not sure about Chicago. In any case, I've always felt that rates are a bit deceptive, for many reasons. Both the schools you've listed are top-notch universities and if you excel in either you'll definitely do well in med school and beyond.
