For example, if I'm editor for the magazine, how would the colleges know whether or not I'm an AMAZING editor or whether or magazine is just kinda average?

They have no way of knowing that. But they do have a way of knowing how dedicated you are to it-- how many hrs a week do u put into it, special responsibilitiesm, etc.
