I'm becoming particularly interested in the cognitive science field (especially linguistics and artificial intelligence). Are there any good not too ultra selective schools out there for this?

The only two schools that come immediately to mind when I hear "cognitive science" are Dartmouth and University of Pennsylvania.

So that'd be a no from my knowledge. Try doing a search. There are plenty of lists.

When you get to this page, do a search for "cognitive science academic programs" to get to the list

Among the schools listed that might fit your needs: Indiana University, Boston U, Lehigh. But there are others on the list as well.
