I know that most places that require Sat 2's require Writing, a Math, and a choice. Do any require a foreign language one, as well (as a fourth?)
What about if I took AP Spanish and got decent grades and decent AP test score?

I'm not aware of any that require the language test for admission. More than a few don't have the specific requirements you note.
However, there are some which have a "language requirement" in the course of study, and some of these allow you to satisfy the requirement through a sufficiently high score on the SAT II. Check the individual schools degree requirements for details. Obviously, in those cases it would be to your advantage to take the SAT II exam at the end of your final HS year of the languaage.
Make sure you read everything yourself--word for word. The admission officers giving the presentations are sometimes mistaken about their own requirements, especially when they are relatively new. I saw this happen at a major university this summer, and the presenter answered a question incorrectly about the distrubution requirements.

I didn't take SAT II language. I took Bio, math IIC, and writing. It depends on your major. Check w/ the schools.
